3 Ingredient Cookies!..YUMMY

A friend of mine turned me onto these little numbers through SkinnyTaste.com!  What to do with a couple over ripe bananas..throw in some oatmeal, fold in walnuts (or in my case glazed pecans because that’s what I had..) and Voila!  Breakfast, lunch or snack on the go 😉

My parents were in town for a night…my Dad LOVES the Family Pumpkin Bread….and I made it vegan.  I served it up to him warm, with vegan butter, unbeknownst to him…His exact words were “Heather, this is excellent”.

I’m having a last slice now with a cup of tea….YUM!! It combines cloves, cinnamon, nutmeg, pumpkin..etc…moist, warm and a bit of vegan butter YUM..!

I WISH the picture did these justice!  I made these with the Banana Foster Parfait for my boyfriend (of whom we should call by his name, Kris) and his friend, Daniel..let me remind you, both are cooks.  Good cooks.  Kris said the next day, ‘These, we need to make again.’  They are fantastic…like Yumbo!

The cajun flavors simmered and sautéed into these vegetables, then tossed with vegan sour cream and the scooped out potato, re-stuff ’em into their potato skins, throw ’em under the broiler for a bit and topped off with creme fraiche! Really?! YUM

Yum…..great staple dish to have around to grab or fast recipe for easy nights.  My boyfriend actually said ‘I could eat vegan if it involved dishes like this’…Lol, he’s such a good sport 😉

Soaking your “Beef” (“cough”) ..or baby bellas.. in soy sauce, then sauteing yellow onion in ginger, sesame oil and soy sauce, add fresh sugar snap peas, carrots, some hoisin mixed with veggie broth and corn starch..let it all thicken just a bit then serve it right over whole grain brown rice…Yum!

Fiery Thai “Beef” Salad

I don’t like salad much.  …..Can you believe that someone that eats primarily Plant Based doesn’t really like salad?? It has to be a darn good, unique, flavorful salad.  I don’t believe in drowning salads in dressings to make them palatable.  A salad itself has to be interesting, creative and amazing enough on its own for me to go there.

I LIKE this salad.

The mixture of warmth from sauteed onions and tomatoes, broiled bella mushrooms and cool from mint, spring mix, water chestnuts and cucumbers, to a bit of fire via sriracha tossed with fresh lime juice, cilantro, brown sugar.  It is so NOT short on flavors and lure.  It’s the sort of salad I find myself going back for more, craving more….which is so off for me to ever crave salad..

Yum!  I highly recommend this with the fresh avocado and a dollop of cool vegan sour cream-on-top version.  The multiple layers of corn tortillas, vegan mexican cheese, black bean onion and spices mixture, baked to bubbly warmth and topped with cool cilantro, avocados and sour cream makes this a perfect experience….Mmmm!  Fyi: It’s great to pop in Tupperware and take with for lunch 😉

This has a bit of kick, so modify if there’s someone in your household that doesn’t gravitate toward the spicy side of things 😉

Oh My Gosh….this is hands down fabulous.  Baby bella mushrooms sautéed in olive oil, sea salt, fresh ground black pepper and A1 Steak sauce..add some creminis…some porcinis after soaking in their own juice…white wine, crushed red pepper, browned onions and whole peeled tomatoes…simmer together 30 mins, toss with whole wheat angel hair, sprinkle with vegan pecorino, mozz and romano mix…fresh parsley

WOW I want more….now.

Indian tonight…Aloo Gobi..oh my, fabulous flavor!

This brings together about a dozen spices from Garam masala to ginger, turmeric, and cayenne.  Cardamom, coriander, cumin and cinnamon.  …the list goes on.  All blended together with sautéed onions, garlic, golden potatoes, cauliflower, tomatoes and chick peas….you know how I love chickpeas! The flavors are fantastic.  Serve over basmati rice or have on its own. YUM!  And, you’ll definitely have people saying ‘what smells so good!?’ when they walk in your house.

ohhhhh searching, looking, wanting some darn good  Lo Mein …stop, ohhhh, found it!  No kidding…though my sons may be appalled….This is their favorite Lo Mein recipe I’ve made for them since they were little, though it used to have chunks of flank steak in it…..pre-vegan days…  I’ve been craving this recipe and not sure how well it would come out, will it be a lame twist on something we used to love?…

Stir-Fried Veggies in Spicy Orange Sauce

Middle of a Saturday…hungry…this recipe came about, YUM!  What a line up of veggies; sweet onions, julienned red bells, straw mushrooms, baby corns, the crunch of water chestnuts, some sugar snap peas, fresh broccoli slaw and chopped green onions all stir-fried up in the kick and sweetness of this Spicy Orange Sauce…it makes you want more and more even though your nose may run a little 😉 Serve it all over hot steaming rice and I recommend sprinkling it with a tablespoon of crushed dry roasted peanuts and some fresh chopped cilantro….did I mention YUM!!
