– 1 1/2 cups white self raising flour*
– 3/4 tsp baking powder
– 3/4 tsp baking soda
– 1/4 tsp salt
– 1 med banana, mashed
– 5 tbs applesauce
– 3/8 cup of water
– 1/2 cup of maple syrup
– 1 tsp vanilla
– 3/4 – 1 cup berries (depending how berry filled you like them, I like ’em bursting!)
Preheat the oven to about 375º F.
Combine the flour, baking powder, baking soda and salt in a large bowl and make a well in the centre. In another bowl, mix banana, applesauce, water, maple syrup and vanilla essence, and pour into the dry ingredients. Mix thoroughly with a high speed mixer, then carefully stir in the berries.
Spoon into silicon muffin pans and cook for 20-25 minutes or until the muffins are browned and well risen.
