Fried Rice with Tumeric

2 T. oil
1 garlic clove, finely chopped
1 small onion, diced
1 t. ground turmeric
1 3/4-2 c. boiled fragrant rice
1/2 t. sugar
1 T. light soy sauce
1/2 t. chili powder
2 oz. fried tofu, quartered (about 1/2-3/4 cup)
For garnish
1 scallion, cut into rings
1 medium tomato, cut into wedges
3-inch piece of cucumber, cut into 1/2-inch slices
In a wok or frying pan, heat the oil until a light haze appears.  Add the garlic and fry until golden brown.  Stirring constantly, add the onion, carrot, turmeric, and rice.  Stir thoroughly. Add the sugar, soy sauce, and chili powder. Stir thoroughly.
Add the tofu, stir, and turn onto a serving dish.  Sprinkle with the scallion rings and arrange the tomato and cucumber at the side of the dish.
Prep time: 3 minutes    Cooking time: 5 minutes
