1 15oz can chickpeas, drained and rinsed
1/2 red bell pepper sliced
1/2 orange bell pepper sliced
1/2 yellow bell pepper sliced 2 Roma tomatoes diced
1 sweet onion sliced
1/4 cup vegetable broth
2 teaspoons minced garlic 1 Tablespoon Rice Vinegar
1/2 of one lemon
1/4 – 1/2 tsp red pepper
1-2 tsp dried basil, or fresh if you have it but then do 1-2 tablespoons
salt to taste
Heat a skillet and add vegetable broth. Add garlic, sliced onion, saute for 3-4 mins. Add all bell pepper, saute til tender.
Put chickpeas in large salad bowl. Add sautéed veggies, fresh diced romas, red pepper, basil, salt and squeeze 1/2 of lemon, and Rice vinegar into bowl. Toss together and Bon Appetit!
