Mushrooms vegan sautéed with Shallots, Garlic and Herbs

 

½ lb fresh mushrooms, whole if small, sliced if medium or large

1 Tb Olive oil

2 Tb Vegan butter, Earth Balance

3 Tb minced shallots or green onion

1 small clove minced garlic, optional

3 Tb fine white dry bread crumbs

Salt and pepper to taste

3 Tb minced fresh or 3 tsp dry parsley, chervil, chives and tarragon, or parsley only

 

Sauté the mushrooms in oil and butter until lightly browned.

Stir in the shallots or green onions, optional garlic and bread crumbs and toss over moderate heat for 2-3 mins

Just before serving season to taste and toss with herbs.
