Stuffed Poblanos

4 fresh poblano peppers, halved, seeded and membranes removed

1/4 tsp salt

1/4 tsp black pepper

1 can red enchilada sauce

1 cup brown rice, cook to package directions

1 can refried beans

vegan cheddar shreads

1 fresh avocado, diced

2 fresh roma tomatoes, diced

fresh cilantro, chopped

Preparation:

Cook brown rice.

Place poblanos cut side up on microwave safe dish, sprinkle with salt and pepper, microwave on high 3 mins covered with wax paper.

While poblanos are cooking mix together 1 cup cooked rice, refried beans, and enchilada sauce.  When poblanos finish, stuff each full with rice mixture and sprinkle with vegan cheddar.  Microwave on High for another 2 mins.  Preheat Broiler to High.

Place poblanos under broiler next for 2-3 mins, til cheese browns a touch.  Sprinkle with avocado, tomatoes and cilantro.

    I am so hungry now!! I have never heard of poblano peppers. Looks and sounds amazing with brown rice!!
