Guess what I’ve been doing?….you’ll never guess….I just finished training in the CRJ700 for Delta Connection…sooo excited
As several of my friends have heard, I feel like the luckiest girl in the world!!..
Before I get off track too much, what does this have to do with eating vegan?..
Look what I found…By the way, training was 8 weeks in a hotel room with a microwave & mini-fridge..
Check these out:
I found these in wal-mart. And since, I’ve found them in the Asian or International isle of any grocery store I’ve gone into. The great thing is it comes with everything you need minus a fork, and guess what, it’s vegan! Pretty much every airport, hotel or office has a microwave and the packets don’t require scissors to open or anything more than 2 Tblsps of water….which I eyeball.
You can put them right in your bag, because they don’t require refrigeration!
I hope they come in as handy for you as they are for me …;)
Chickpeas in Curried Coconut Broth
All I can say is YUM…soooooo good!

Best Vegetable Pad Thai
This Pad Thai is hands down amazing. I LOVE Pad Thai and am particular about it. I hope you enjoy this as much as we did. The proportions in the recipe will make 4 modest sized servings or 2 healthy size servings 😉 So, modify as necessary, double it if you need (want) 4 healthy size servings or if you want leftovers….which I LOVE having leftovers of this!

Yum! I highly recommend this with the fresh avocado and a dollop of cool vegan sour cream-on-top version. The multiple layers of corn tortillas, vegan mexican cheese, black bean onion and spices mixture, baked to bubbly warmth and topped with cool cilantro, avocados and sour cream makes this a perfect experience….Mmmm! Fyi: It’s great to pop in Tupperware and take with for lunch 😉
This has a bit of kick, so modify if there’s someone in your household that doesn’t gravitate toward the spicy side of things 😉
