Easy Black Beans and Rice

  • 2 teaspoons olive oil, divided
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3/4 cup uncooked brown rice
  • 1 1/2 cups low sodium, low fat vegetable broth
  • Optional – sliced bell peppers or any other desired veggies
  • salt & pepper to taste
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chili powder or cayenne pepper
  • 3 1/2 cups canned black beans, drained
  • Optional: diced fresh tomato
  • Optional: chopped fresh cilantro
  • Optional: sliced fresh limes
  1. In a stockpot over medium-high heat, heat the oil. Add the onion, and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
  2. Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes.
  3. While Rice is cooking saute any optional veggies other than tomatoes in a skillet with a little olive oil, season with salt and pepper to taste.
  4. Add the sauteed veggies and Add the spices and black beans.  Mix thoroughly.  Serve topped with optional diced tomatoes, cilantro and lime.
