My Family’s Pumpkin Bread

3 cups sugar

1.5 cups olive oil

Ener-G Egg replacer for 5 eggs

1 – 28 ounce can pumpkin

4.5 cups flour

3/4 teaspoon baking powder

1.5 teaspoon baking soda

1.5 teaspoon cloves

1.5 teaspoon cinnamon

1.5 teaspoon nutmeg

3/4 teaspoon salt

Cooking spray

Pre-heat oven to 325

Mix the sugar and oil together til well blended.  Add the ener-G egg replacer, mix thoroughly.  Add the pumpkin, mix thoroughly.  Add all dry ingredients and mix thoroughly.

Grease 2 large loaf pans or 3 medium with cooking spray.  Pour batter evenly into pans.  Bake for 1hour 10 mins, or until a knife stuck down the center comes out clean 🙂

    Heather, this looks scrumptious! I love the recipe and haven’t eaten pumpkin bread in a long time. I love the olive oil addition. This would be good as muffins too!! Yummy 🙂
