Vegan Fried Rice

2 T. oil
2 garlic cloves, finely chopped
1/3-1/2 c. mixed cooked beans, e.g., snow peas and green beans
2 T. diced carrot
2 T. diced tomato
2 T. diced pineapple
2 T. light soy sauce
1 t. sugar
1/2 t. ground white pepper
1 3/4 c. boiled rice
Cilantro leaves, for garnish
In a wok or frying pan, heat the oil and fry the garlic until golden brown.  Stirring constantly, add each of the remaining ingredients one at a time, except for the cilantro.  Stir thoroughly until  the rice is heated through, then turn onto serving dish and garnish with the cilantro leaves.
Preparation time: 3 minutes    Cooking time:  5 minutes
