Garbanzo Stew

1 Tb Olive oil

1 Cup chopped onion

1 30 oz can diced tomatoes

1 tsp sugar

1 tsp curry powder

1/2 tsp salt

1/4 tsp tumeric

1/8 tsp ground red pepper

1 30 oz can chickpeas (garbanzo beans), drained

1/2 tsp garam masala

1/4 cup fresh cilantro

Peanut Rice (optional)

Heat olive oil in a large saucepan over medium heat.  Add onion and saute 5 mins or until tender.  Stir in tomato and next 5 ingredients (tomato through pepper).  Cook 8 mins or until thick, stirring occasionally.  Stir in chickpeas and garam masala; cook for 5 mins or until thoroughly heated.  Sprinkle each serving with 1-2 tablespoons of cilantro.  Serve over peanut rice if you like or without if you are limiting carbs.
