1 30 oz can chickpeas (garbanzo beans), drained

1/2 tsp garam masala

Peanut Rice (optional)

Heat olive oil in a large saucepan over medium heat.  Add onion and saute 5 mins or until tender.  Stir in tomato and next 5 ingredients (tomato through pepper).  Cook 8 mins or until thick, stirring occasionally.  Stir in chickpeas and garam masala; cook for 5 mins or until thoroughly heated.  Sprinkle each serving with 1-2 tablespoons of cilantro.  Serve over peanut rice if you like or without if you are limiting carbs.

  2. Sounds really good! We ate at a Vegetarian Indian buffet last night and this sound similar to a dish we had. Looking forward to giving it a try. Thanks for your hard work putting these food options out there for us to try!
