“Crab” Stuffed Bell Peppers

  • 4 Bell peppers
  • Olive Oil
  • 1 stalk celery
  • 1/2 cup green onion
  • 1 garlic clove minced
  • 1/4 cup Vegan Butter, Earth Balance
  • 1/2 cup breadcrumbs
  • 1 can chickpeas, rinsed & drained
  • 1/4 teaspoon cayenne pepper
  • Sea salt and Fresh ground black pepper divided
  • 1/2 cup shredded Vegan cheese, I used Daiya Mozzarella
  1. Cut bell peppers in half, keeping stems attached (for appearance :), remove membranes & seeds.  Rub exterior with some olive oil, sprinkle with sea salt and fresh ground black pepper.  Put under the broiler for 4-5 mins.
  2. Saute celery, green onions & garlic in butter, except bell peppers, til desired degree of doneness.
  3. Mix with chickpeas and breadcrumbs.
  4. Season to taste with salt and pepper. (If dry, add a small amount of water).
  5. Stuff bell peppers and cover tops with cheese
  6. Bake 350°F for 20-30 minutes.
