Berries as Crepe Filling

Berries

1/4 c. fresh raspberries

1/4 c. fresh blueberries

1/4 c. fresh blackberries

1/4 c. fresh quartered strawberries

Optional 1 banana cut into 1/2 inch slices

1 Tb granulated sugar

Optional Powdered Sugar

These ingredients listed make enough for about 8 crepes.  Adjust as needed.

Combine first 6 ingredients in a saucepan over med-low heat.  Cook 4 mins or until thoroughly heated, stirring occasionally

Spoon about 1/2 cup fruit mixture in center of each crepe.  Fold over both sides of crepe into the middle over fruit.  Sift with powdered sugar as desired.

    I haven’t had crepes in a long time. This sounds so good right now! Crepes, fruit and powdered sugar; triple yummy!!!
