BANANA ZUCCHINI BREAD WITH CHOCOLATE CHIPS

2 cups zucchini, shredded

2 whole medium ripe bananas

1 cup sugar

2/3 cup olive oil

Equivalent of 2 eggs (Ener-G Egg Replacer, or flaxseed and water mixture)

2 cups flour

2 ½ tsp baking powder

½ tsp salt

½ tsp cinnamon

2/3 cup vegan chocolate chips

½ cup chopped walnuts (optional)

Preheat oven to 350 degrees.  Grease and flour 2 8×4 inch loaf pans.

Mix together zucchini (drain off any excess liquid), bananas, sugar, oil, and eggs.  Add dry ingredients and chocolate chips.  Divide batter between the two loaf pans and top with chopped walnuts.  Bake for 35 – 40 minutes.

    Love bananas, zucchini, and chocolate chips! I have never baked with Ener-G Egg Replacer. I will have to look into that.
