Black Beans, Whatever’s on hand :) Over Rice

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper (optional, or whatever veggies you have on hand)
  • 3 garlic cloves, minced
  • 1/2 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground red pepper
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can diced tomatoes, drained, (optional)
  • 1 (15-ounce) can sweet corn drained (optional)
  • 1 cup hot cooked long-grain rice

Heat oil in a medium saucepan over medium heat. Add onion and bell pepper(or veggies you have on hand); cook 5 minutes or until tender, stirring occasionally. Add garlic; cook 1 minute. Add water and next 9 ingredients (through corn); bring to a boil. Cover, reduce heat, and simmer 10 minutes or until thoroughly heated. Place 1/4 cup rice on each of 4 plates; top with 1/2 cup bean mixture.
