Fettuccine with Tomato Cream Sauce

This was inspired by a recipe I saw on CookingLight.

TheHealthyFlavor and I had the same sentiments after the fantastic flavor and simplicity of the easy Pasta Arribbiata

I wanted….what can I say but MORE..with a different flare.  I stumbled upon this, plant based-modified it a bit, along with a couple of ingredients that sounded good to me and WOW….

You can sub or add olives for the mushrooms, or asparagus tips…Yum..Enjoy!!  The Recipe is Here!

Pasta Arrabbiata! W/ Fresh Torn Basil So Simple.. So WONDERFUL

A glass of red wine….a wonderfully simple fabulous Italian dish….Mmmmm invite me anytime!

Arrabbiata sauce is so beautiful in its simplicity, whole peeled tomatoes, and their juices..I like to half or quarter them..crushed red pepper.. roasted garlic MMM! over your favorite pasta

..fresh torn basil to give it the perfect final touch this simple perfection doesn’t even need but it’s brought over the top..YUM!!!

What’s so amazing about this is not only how simple it is, or how much I am sitting here enjoying this now…but also how much I could see making this camping on a multi-day white water rafting trip!….anyone in?!

….the pasta may be a little crushed..slightly crumbled…but at that point it’s camping..we’re in the woods 😉

…lol or we could bring it pre-done in ziplocks like Will Farrell in Elf!…

Smoky Chickpeas, Veggies, Kale, Cilantro and Grilled Naan

A fantastic recipe to have around so you have something completely delicious to take anywhere or eat in a rush.

I like to have something from my ‘Pastas, Soups, Stews, Casseroles and Concoctions’ category in the fridge at all times (my gosh that was a mouth full!).  That way during the week, whenever I’m in a rush to eat (or lazy) or need something I can throw in tupperware and take with, I’ve got something good 😉

If you like things a little less spicy, lighten the amount of garam masala and red pepper a bit.  Also I grill all the naan the day I make the recipe, cut it up and keep it in a ziplock, so, again, it’s easy to grab and ready to eat when I need it. YUM!

Vegan Lasagna Mmm!!

Hi Everyone!  Another FABULOUS recipe from the friends’ night cook and share!  This one is from none other than my up-hill running, 6-pack totin’ (yes, I do mean abs), good friend Sandy 🙂  She and her husband Jack are inspirational in their dedication and discipline to healthy Vegan eating, exercise, and other areas to learn from.

This Vegan lasagna is such a treat, as one of our friends, Shelley, said the night she tried it, “Is this really Vegan??!”  It is.  And it’s great.
