This is a foundational recipe for black beans and rice. You add whatever extras you would like in it…tomatoes, other sliced sautéed veggies, cilantro, lime, whatever makes you happy. Or have a big batch of the base around as a side, add veggies when you want, or to have something super easy to grab anytime you’re on the run!
Here’s mine after I added the sautéed veggies I like in it (red, yellow and orange bell peppers), and topped with fresh tomatoes, Yum! Perfect to have in the fridge for those rushed times and when you need something great to grab 😉
